Paleo Lemon Blueberry Muffins!


Dry Ingredients:

1 1/4 cup of almond flour

3/4 cup of coconut flour

3 tsp of organic baking powder

A pinch of sea salt (I use grey French sea salt or pink Himalayan salt)

-1 pint of organic blueberries

Wet Ingredients:

-3 eggs

-1/2 cup of a nut milk (almond, cashew) or coconut milk (coconut will add a slightly sweeter flavor)

-2 tablespoons of coconut oil (melted)

-Organic lemon extract

1/4 cup of raw, local, honey

Extras:

-You can nuts for bit of crunch (chopped almonds or walnuts are great)

-Sprinkle top of muffins with coconut crystals for added crunch topping

Preheat oven to 350

Mix dry ingredients and wet ingredients separately and then combine

Grease muffin pan with pam

spread mixture evenly among muffin tin

bake 20-30 minutes or until golden brown
