Salmon and poached eggs brunch

Sunday morning brunch has always been a favorite of mine.  Here's another way to make a fantastic brunch and stay on the path of healthy eating

 

-2.5 oz of smoked salmon (make sure you read the ingredient list.  Some products contain sugar or artificial coloring).

-Cherry tomatos

-Sliced onion

-Two eggs poached

-Arugula (as much as you like)

-Juice of one fresh squeezed lemon

-1 tablespoon of olive oil drizzled on top of bed of arugula 

-Capers

-Salt and pepper
